Our pasta is strictly artisanal, handmade and bronze-drawn, as it has been handed down to us over two centuries of generations. This gives it an exceptional flavor, thanks to the rough and porous surface that retains the sauce. In addition to the common formats we produce some special formats, the most traditional and typical of Gragnano Each pasta format requires a different cooking time, depending on the texture of the pasta. Other factors, however, affect it greatly, such as weather conditions, fire volume, external humidity, and amount of water. Therefore we suggest, for each format, a minimum and a maximum cooking time to follow until draining, which you will do when the pasta is al dente, ...very al dente!
