This is a No Longer Active yeast as it is obtained by drying. To be reactivated it must be used in addition to the classical yeast and flour used in the dough. N.B. The amount of yeast usually used remains unchanged "Criscito" is a Dried Mother Yeast obtained by kneading exclusively water and type "0" wheat flour. Why Use It. Because it gives the dough the same properties as if produced with mother yeast: Preservability, Extensibility, Digestibility, Taste and Cold Crunchiness."
