Born and raised in an area between Puglia and Basilicata, Lenticchia di Altamura I.G.P. a small legume absolutely unique in its organoleptic characteristics. From seed to green seedling. Then the little white-glaucous flowers, then the fruit: the lentil. The Protected Geographical Indication designates as Lenticchia di Altamura the dry grain that has a coloration ranging from different shades of green to brown, with a flattened shape that, depending on its size, will be identified as large or small. The Altamura Lentil has peculiar characteristics compared to other lentils. In fact, it has an excellent texture and high iron and protein content, ease of cooking and, above all, a unique scent and flavor, conferred precisely by its land of origin and difficult to find elsewhere. This demonstrates the importance of the pedoclimatic vocation of the Altamura area, the Alta Murgia, the entire pre-Murgian ditch that embraces Matera and the karst territory of the ravines. Lentil-growing lands in large part fall within the beautiful Alta Murgia National Park.
