A historic product of Acetaia Giusti, "il Classico" has great versatility, both for use in cooking and directly raw. With good density and an excellent sour-sweet balance, it is characterised by hints of ripe fruit and notes of liquorice and black pepper. Ingredients: Cooked grape must, aged wine vinegar. Aging: For at least 8 years in wooden barrels, with the addition of already aged balsamic vinegar taken from centuries-old barrel batteries.
